A selected leg of pork, with the bone removed and trimmed to obtain the characteristic rounded shape. The traditional salting and resting phases follow, before seasoning for at least 9 months. The final “greasing”, typical of fine bone-in hams, is enhanced with aromas such as ground white pepper, allspice and juniper, giving the product a traditional appearance and above all an intense and appetising flavour, with a pleasant smoky aftertaste.
