Traditional rustic salami
Settecorde is a salami prepared with Italian pork from the supply chain: the noblest cuts, shoulder and ham for the lean part and pancetta for the fat part. The processing method is that of the past: the mixture is seasoned with black peppercorns and fresh garlic macerated in good red wine, and then stuffed into natural gut. The hand tying gives it the typical shape of home-made salami, followed by slow and gradual seasoning for at least 60 days. The result is a soft, fragrant salami with a sweet taste. According to tradition, the 7 rounds of the salami rope defined the daily quantity that a peasant family could afford: the seventh turn was the most abundant one on Sunday, the day of celebration!
