Pastrami “New York Style”

"Corned" beef breast, cooked and smoked. It is first placed in brine, then sprinkled with a tanning of various spices: pepper, coriander, a touch of cinnamon and garlic. It is then steamed in the oven and finally lightly smoked with beech wood. A very tender and succulent product, slightly spicy, with a tangy flavour and a slightly smoky fragrance. The typical taste of its meat recalls the sweetness of corn.
