Rosso di Coppa

A defatted pancetta wraps a coppa, both of Italian pork. After the salting and the resting phase they are rolled up, stuffed into casings and then tied in an elastic net that keeps them compact throughout the seasoning. The resulting product is unique. Extremely sweet, slightly spicy flavour.
