Artisan product of the centuries-old Umbrian pork-butchery tradition. The legs, from pigs born and raised in Italy, are processed according to the Prosciutto di Norcia IGP consortium regulations. After trimming the rind, more accentuated than the other protected raw hams, the leg is salted with a mixture of sea salt and natural spices. During the seasoning, at least 16 months long, the ham is covered with a lard of ground fat, salt, pepper, flour and natural flavours, which protects it from external agents and preserves its softness. Slightly spiced, with a savoury taste.
